  • Classic Parmesan Scalloped Potatoes  RECIPE BY SOUTHERN LIVING

Gently stirring twice while baking promotes even cooking and creaminess to this hearty scalloped potato recipe. Pull out of the oven, stir once more, then sprinkle with cheese, and continue baking without stirring for a casserole that's golden brown on top. For a scalloped potato recipe that doesn't require a ton of hands-on time or a plethora of ingredients, this delicious dish is sure to be a crowd-pleaser.

Makes 8 to 10 servings  Ingredients

2 pounds Yukon gold potatoes, peeled and thinly sliced 
3 cups whipping cream 
1/4 cup chopped fresh flat-leaf parsley 
2 garlic cloves, chopped 
1 1/2 teaspoons salt 
1/4 teaspoon freshly ground pepper 
1/2 cup grated Parmesan cheese 
How to Make It

Step 1

Preheat oven to 400°. Layer potatoes in a 13- x 9-inch or 3-qt. baking dish.

Step 2

Stir together cream and next 4 ingredients in a large bowl. Pour cream mixture over potatoes.

Step 3

Bake at 400° for 30 minutes, stirring gently every 10 minutes. Sprinkle with cheese; bake 15 to 20 minutes or until bubbly and golden brown. Let stand on a wire rack 10 minutes before serving.

Gruyère Scalloped Potatoes: Substitute finely shredded Gruyère cheese for Parmesan. Reduce parsley to 2 Tbsp. and salt to 1 tsp. Prepare recipe as directed, stirring 1 tsp. freshly ground Italian seasoning into cream mixture in Step Note: We tested with McCormick Italian Herb Seasoning Grinder.

Each of the arts offers a unique lens into the ordinary. They make us reevaluate our surroundings and transform our perceptions of the everyday. That goes for a Broadway set design that transports an audience to a particular time and place, or a novel’s rich narrative that shines light on another culture and cultivates empathy within a reader.  The best restaurants have that same ability, which is why dining out is often called an experience.

To assemble our list, we ate through every food truck, barbecue joint, deli, bakery, and swanky hotel restaurant that debuted between October 2018 and September 2019, evaluating on taste, technique, atmosphere, service, value, and, most importantly, its contribution (if any) to Austin’s dining scene.

From a new school shabu-shabu restaurant to a matchbook-sized taqueria giving border cuisine its due, these are the spots that moved us with their immersive decors, cerebral presentations, and intimate dishes that, well, also happened to taste damn good.

Pumpkin Pie Brown Rice Cereal Truffles⁣
Ingredients: ⁣
1/3 cup pumpkin puree ⁣
1/3 cup nut butter (I used peanut butter)
3 T almond flour ⁣
2 T coconut flour ⁣
2 T maple syrup ⁣
1 t vanilla extract ⁣
1 t pumpkin pie spice ⁣
1 cup brown rice cereal ( I used @sprouts organic)⁣
1 cup dark chocolate chips ⁣
1 TBSP coconut oil⁣
Blend first 7 ingredients all in a food processor and then mix in cereal. Roll into balls and freeze for at least 15 minutes. Meanwhile melt the chocolate chips in a microwave safe bowl with coconut oil by microwaving for 60 seconds, or until chips are melted and smooth when stirred. Roll frozen truffles in melted chocolate and set on parchment paper to harden. Store in the fridge or freezer!⁣
