Best Mardi Gras Party in Town!

First, get your tickets now for the party of the season at Hotel Vegas in Austin.  All the festivities start at 6:00 pm and go into the wee hours … until 2:00 am! They are toasting to the occasion with hurricanes, beads, and King Cake.  Take a bite and if you “get the baby,” you will win a Hotel Vegas SXSW 2025 Key Tag.

So we thought we’d stop right here to explain this tradition and dove into Better Homes & Gardens to get the story about this tradition.
Here’s a short version:
Mardi Gras (a.k.a., Fat Tuesday) falls each year on the Tuesday before Ash Wednesday at the start of Lent. Traditionally, as part of that celebratory carnival, colorful king cakes are served at parties and gatherings. King cakes, either purchased or homemade, also tend to contain one customary ingredient—a tiny plastic king cake baby.
The tradition dates back hundreds of years—and there’s an interesting story behind how the king cake baby made its way into the pastry. The practice of making and serving king cakes actually dates back to the origins of Mardi Gras itself, which was first celebrated in America in 1699. Baking a baby into the cake wasn’t common practice until the 1800s.
So, before you put on your beads or fire up that delicious batch of gumbo, arm yourself with the details about why there may be a small baby in your slice of cake—and what it means if you’re the one who finds it. Hint: It’s good luck!”
Best Mardi Gras Meal Ideas – Any Day of the Year

We love to cook!  So much so that we thought this Blog would be the perfect spot to share some of our favorite Cajun recipes from TasteofHome.com that are ideal for this festive time of the year.  Bring on the beads, dress as colorfully as you want to, and let your own good times roll!

King Cake – Of Course!

Ingredients:
•    2 packages (1/4 ounce each) of active dry yeast
•    1/2 cup warm water (110° to 115°)
•    3/4 cup sugar, divided
•    1/2 cup butter, softened
•    1/2 cup warm 2% milk (110° to 115°)
•    2 large egg yolks, room temperature
•    1-1/4 teaspoons salt
•    1 teaspoon grated lemon zest
•    1/4 teaspoon ground nutmeg
•    3-1/4 to 3-3/4 cups all-purpose flour
•    1 teaspoon ground cinnamon
•    1 large egg, beaten

Glaze

•    1-1/2 cups confectioners' sugar
•    2 teaspoons lemon juice
•    2 to 3 tablespoons water
•    Green, purple and yellow sugars

Directions:

In a large bowl, dissolve yeast in warm water. Add 1/2 cup sugar, butter, milk, egg yolks, salt, lemon zest, nutmeg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).

Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down. Turn onto a lightly floured surface. Roll into a 16×10-in rectangle. Combine cinnamon and remaining sugar; sprinkle over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Place seam side down on a greased baking sheet; pinch ends together to form a ring. Cover and let rise until doubled, about 1 hour. Brush with egg.

Bake at 375° for 25-30 minutes or until golden brown. Cool completely on a wire rack. For the glaze, combine the confectioners' sugar, lemon juice and enough water to achieve the desired consistency. Spread over cake. Sprinkle with colored sugars.

PS. If you want to hide a token plastic little baby inside, do so by cutting a small slit in the bottom of the baked cake – and be sure to tell your guests.  Have a small prize ready for the winner!

(Super) Easy Jambalaya

Ingredients
•    1 package (8 ounces) jambalaya mix
•    1 package (14 ounces) hot smoked sausage, cut into 1/2-inch slices
•    1 cup uncooked shrimp (16-20 per pound), peeled and de-veined, cut into 3/4-inch pieces
•    3 green onions, thinly sliced
•    1/2 cup shredded cheddar cheese
•    1/2 cup pico de gallo

Directions:

Prepare jambalaya mix according to package directions, adding sausage and shrimp during the last 5 minutes of cooking. Remove from the heat. Stir in cheese, pico de gallo and green onions; heat through.

Delicious Cajun Peach Catfish

Ingredients:

•    2 tablespoons olive oil
•    2 teaspoons lemon juice
•    1 teaspoon Cajun seasoning
•    1/2 teaspoon dried thyme
•    1/3 cup finely chopped pecans
•    2 tablespoons grated Parmesan cheese
•    1 tablespoon dry bread crumbs
•    1 tablespoon dried parsley flakes
•    4 catfish fillets (6 ounces each)

Directions:

Preheat oven to 425°. In a small bowl, combine oil, lemon juice, Cajun seasoning and thyme. In another bowl, combine pecans, cheese, breadcrumbs, parsley and 1 tablespoon of the oil mixture.

How To Pick Out A Perfect Pumpkin

So, where do you start? It depends on the purpose. If you have plans to host a pumpkin carving party, focus on the large, uniform shapes; they are best for carving creative creatures. If you are seeking a pumpkin for the perfect pumpkin pie, here’s the rule: the smaller and heavier, the better.

Go To a Concert in Austin

As the music capital of the world, there is no lack of entertainment this month and throughout the year. Some of the city’s best concerts are on tap in June and July, so get your tickets now.
 

The Drop-in Summer Series: Inspired by Austin’s love of outdoor jams, this free outdoor concert series is every Thursday, August 15. As their website notes: They provide the tunes, the drinks, and the view, you bring the energy, and we will bring the vibe all summer long on the Hartman Concert Lawn.

Tickets for The Drop-In are FREE. Long Center Members will receive early access to RSVP every Friday before the public, who can RSVP every Monday. It goes without saying, though…, that drop-ins are welcome, too!

Candlelight: For a more classical night on the town, Southwestern University offers the “Candlelight Concerts” with a night of Vivaldi’s classics.

Santa on the Terrace will be open to the public from 12:00 pm to 4:00 pm on Long Center’s H-E-B Terrace. This free community event includes family photos (bring Fido, too!) with Santa in his signature sleigh with its iconic skyline background. And that is just the beginning. Stay around to participate in the kids’ reading circle with Mrs. Claus, Kiddie Express Train rides, live music by Melissa Engleman, The Moriah Sisters, and Jenny and the Corn Ponies, emceed by Erica Nix. Field of Light

In conjunction with the Lady Bird Wildflower Center, C3 presents the spectacular Field of Light presentation, created by British artist Bruce Munro.  Within the 16 acres at the Texas Arboretum, you and your family can capture the essence of the renowned display of 28,000 fiber-optic light pods. The design celebrates and captures the natural topography through the vibrant solar-powered lights.

Santa’s Pet of the Week Promotion

Gather the family, bundle up and head on over to the 1912 Bertram Depot this holiday season as the North Pole Flyer is back! Earlier this month we provided you with lots of fun and festive ways to get into the mood of the holidays – and Thanksgiving in particular. To keep the theme moving through the rest of the month, here are more ways to enjoy your family and friends today and through your Thanksgiving feast!
Play Hide the Pumpkin
No matter what the weather, this game can be played indoors and out.  You only need a dozen (or more) of those cute little pumpkins and gourds and hide them like it’s Easter!  The easy part follows – let the kids keep the pumpkins to color as a decoration for the table on Thanksgiving Day. Or better yet, use them as name place cards for your guests.
Tik-Tok & In-laws
Got company in town or coming your way?  This is a perfect time for the kids to make their own documentary about their friends and family.  Think:  video for TikTok!  They will be amazed to hear what their Grandma and Grampa’s Thanksgiving memories are, and the interview will be something to treasure for years to come. 
Stroll Down Memory Lane
Once the videos are done, find some time to look through the family scrap books with your family.  If they are not marked with names or details, now is a wonderful time to chart the past so as not to lose the history of your ancestors. Families to follow will appreciate the time and talent that they will treasure and pass on for years to come. 
Create a Gratitude Vase or Bowl 
Everyday is a day to be thankful for what we have in life, yet it is during the month of November when the idea is more vivid than others.  Throughout the month, select one day a week (maybe Sunday) and have the family (and your friends if you so desire) write down their thoughts on Autumn colored paper and place their words of ‘thanks’ in a clear vase or bowl. During dessert on Thanksgiving, pass the bowl or vase around the table and read them out loud.  
Bring Out The Board Games   
When is the last time you played Bingo? How about Monopoly or a good old fashion round of Go Fish or Yahtzee!  If you don’t have games at home, hit the local thrift shops as they usually overflow with options to get the gang together this holiday season.
Thank a Soldier
There’s a program called Operation Gratitude that welcomes letters from all ages thanking our soldiers for their service.  From personal cards to hand-drawn colorful pictures of pumpkins and turkeys, any and all messages will be delivered to bring a little joy into the lives who deserve our thanks most.
